 Kūmara and Orange Bliss Bites

These Kūmara and Orange Bliss Bites are a delicious homemade snack, perfect for some pre-workout fuel or as a pick me up when you are on the go. Makes a generous batch and stores perfectly in the freezer. Eat straight from the freezer or defrost for 10-15 minutes to soften.

Ingredients: Kūmara and Orange Bliss Bites

  • 2 large Kūmara, roasted to give 750g
  • 1 cup of dates or prunes
  • 1 orange, zest and juice
  • 1/2 cup cocoa powder
  • 1/2 cup chia seeds
  • 2 cups almond meal
  • 2 cups rolled oats
  • 1/2 cup Everee #3 (or Everee of your choice)
  • 2 cups shredded coconut plus extra for coating top and bottom
  • 2 Tbsp maple syrup
  • 1 tsp vanilla essence
  • 1 tsp cinnamon
  • 1/2 cup pumpkin and sunflower seeds

Directions

Step 1

Preheat the oven to 180°C and roast kumara in skin for I hour or till soft and cooked. Allow to cool then peel and place in food processor.

Step 2

Soak dates or prunes in boiling water for 30 minutes, drain and add to kumara. Blend till smooth.

Step 3

Add all remaining ingredients to the food processor except the sunflower and pumpkin seeds. Pulse to you have a smooth mix.

Step 4

Line a 30x20cm tin with baking paper and sprinkle over some coconut, 1/2 of the sunflower and pumpkin seeds

Step 5

Scoop mixture into lined baked tin and smooth out with a spatula or wet hands.

Step 6

Sprinkle over remaining coconut and seeds, press in lightly.

Notes

  • Storage: Store Kūmara and Orange Bliss Bites in an airtight container in the fridge for up to 7 days, or freeze for up to 2 months.
